Between the covers of Vegetarian Cooking for Everyone by Deborah Madison, author of The Greens Cookbook, are 742 informative pages including 1400 recipes that make her book the definitive vegetarian cookbook of the millennium.

The book begins on the inside covers with an explanation of common terms used throughout the work. What follows is a literal encyclopedia of kitchen basics not just for vegetarians, but truly for "everyone." Madison's food philosophy truly includes all who are interested in good food prepared well. She teaches beginners how to demystify the process of cooking by gently guiding them through simple logic to maneuver about the kitchen with confidence.

Do you need a detailed, concise chapter on wines and which goes well with special dishes, spices or herbs? Are you lacking information on knives or kitchen equipment and their selection and care? It's all in the book. There is also an outstanding section on seasonings and herbs.

Each of the recipe sections, from appetizers to desserts, is beautifully presented, extensive, creative, and offers diverse flavors. The appetizer section even has recipes for little tidbits to nibble such as seasoned nuts and seeds. Sauces to please every palate include fruit and vegetable varieties as well as spiced sauces and relishes. Madison's versatility with vegetables is awesome and bound to inspire anyone who appreciates creativity in the kitchen. The three sections of beautiful color photos add a special perk to the book and heighten one's desire to go on a cooking binge.

This book might pose some frustration for vegans who would have to peruse the ingredients of each recipe carefully to determine if it is vegan or can be adapted to a vegan dish. Many of the recipes rely heavily on dairy products that cannot be easily substituted, such as those with cheese as the focus. That aside, this is an outstanding reference for every cook's bookshelf, vegetarian or not.
