Look out, Al Gore! Todd Winant is right behind you. The Earth Voice Food Choice Manual is designed for use by teachers, parents, food service personnel, and young people. It not only presents factual information to support a plant-based eating option, but it also shows how to take action to bring healthier foods to schools. A large section of the manual features 100 vegan recipes, most designed for schools and institutions. Many are from Jennifer Raymond who teaches healthy vegan cooking and nutrition throughout the U.S. Her recipes are usually zero or low fat. Others come from the Physicians Committee for Responsible Medicine and Vegetarian Resource Group. Everything from Pita Pizza to Applesauce Cake is available for young people and adults who want healthier options.
