Rice Berry Pudding
PURPLE PASSION FLUFFERY

For a finishing touch to a romantic valentine dinner, prepare a dessert that speaks to the inner passion. One that evokes the senses, delights the eye, sends the taste buds into a pleasure frenzy, and brings love to the foreground. Easily prepared in the blender, this unique rice pudding, highlighted with berries, blossoms when flavored with rosewater. The dessert can be made several hours or a day ahead, refrigerated, and served chilled in long stemmed glasses. Alternatively, the Purple Passion Fluffery can be gently warmed just before serving.

Yield: 2 to 3 servings

    1 1/2 cups (360 ml) cooked Basmati brown rice *
    1 cup (240 ml) frozen berries (raspberries, blueberries, or blackberries or a combination)
    1/2 cup (120 ml) organic sugar
    1/2 cup (120 ml) soymilk
    2 tablespoons rosewater
    1 tablespoon lemon juice
    1/2 teaspoon vanilla extract

    2 to 3 whole berries
    Mint leaves

  1. Place the cooked rice in a blender and add the frozen berries, organic sugar, soymilk, rosewater, lemon juice, and vanilla extract. Blend until all the ingredients are thoroughly combined. You may have to stop the machine several times to scrape down the sides and redistribute the ingredients.
  2. To serve immediately, spoon the Purple Passion Fluffery into long-stemmed wine glasses and garnish with a berry in the center of each. Finish with a mint leaf or two and serve. To serve chilled, spoon the pudding into long-stemmed glasses or dessert dishes and refrigerate for 2 to 4 hours.

* To make the brown rice, combine 1/2 cup (120 ml) Basmati brown rice, 1 1/4 (300 ml) cups water, and 1/4 teaspoon salt in a 1-quart (1 liter) saucepan. Cover, and bring to a boil over high heat. Turn the heat down to low and steam for 30 to 35 minutes or until the rice is tender.
